Mushroom Gumbo

- 1/4 cup vegetable oil
- 1/4 cup plain flour
- 1 large brown onion, chopped
- 2 chilis (chopped) or use dried chili flakes
- 1 tablespoon dried oregano
- 2-3(generous) teaspoons minced garlic
- 2 carrots, chopped coarsley
- 1 large green capsicum, chopped
- 500g button mushrooms, chopped into large chunks
- 1 (400g) can crushed tomatoes
- 1 (400g) can red kidney beans, drained
- 2 cups vegetable stock
- Put oil in a large saucepan on a med heat.
- Add flour & stir for 3-5 mins, until it turns a golden brown colour.
- Add onion, garlic, chili, capsicum, carrots & oregano & cook this for 5 minutes.
- Add mushrooms, stock, beans & tomatoes.
- Bring this to the boil then reduce heat to a low flame & simmer for 15 mins until thickened.
- Serve with brown rice.
Pazu's Notes
The times given in the recipe are a bit short, I usually cook it for longer. It's also really easily scalable. Also - use a big pot, the oil and flour mixture at the start is really fucking hot and it's thick so if you splash some on you it burns badly. They call it 'cajun napalm'...
